“Ricing” Sun

A grain of rice the Sun gave birth

its gentle shell of flowers

bloomed like a rose in summer blaze,

a lily, a song of fire.

How did you make it to my plate?

From which far land you came?

Did you sneak in a drop of dew?

My Sun sent you on a ray?

I rise with dawn and soak your grains;

they sizzle in my pot.

You open your aroma of grace —

I praise you “ricing” sun!

RECIPE:

a. 4 oz of cooked whole grain jasmine red rice (smells like sweet popcorn when being cooked!)

b. 1 Tablespoon of nut butter (almond, peanut, cashew or soy)

c. Seasoning: options of brown sugar, honey, agave or stevia (sugar free); a dash of ground vanilla bean; a dash of cinnamon; for chocolaty flavor, use 1 Tablespoon of sugar free cocoa or carob powder

d. 2 oz of cottage cheese (for a vegan recipe, use cashew cheese)

Mix ingredients in a, b and c with around 1/4 cup of water or less in a small pot in low to medium heat for a few minutes. The nut butter will give it enough consistency to shape it. Then put in a small plate and shape it as you like (a small square, a ball, a heart.) Top with cheese. Enjoy as dessert!
